2 cups All Purpose Flour
1 cup Dark Brown Sugar
2 ½ tsp Baking Powder
2 tsp Ground Cinnamon
½ tsp Fine Salt
½ tsp Ground Ginger
½ tsp Ground Cloves
½ tsp Ground Nutmeg
¾ cup Buttermilk, room temperature
½ cup Vegetable Oil
1 Large Egg, room temperature
1 cup Pure Pumpkin Puree
1 tsp Vanilla Extract
1 cup Chopped Pecan Pieces
1 cup Pecan Meal
Instructions:
- Preheat oven to 400°F and spray a muffin pan with non-stick spray.
- In a large bowl, combine all dry ingredients.
- Add all wet ingredients into dry ingredients, mixing well.
- Fill the muffin pan and bake for 20-22 minutes.
