Maple Pecan Loaf Cake

Fall is around the corner, and this is a great sweet treat for the season!

Perfect for a comforting snack any time of day. 

Cake
1/2 cup Butter
2/3 cup Sugar
1/2 tsp Maple Extract
2 Eggs
1 tbsp Baking Powder
1 1/2 cups All Purpose Flour
1/2 cup Milk
1/2 cup Pecan Meal
1/4 tsp Nutmeg

Topping
1/3 cup Brown Sugar
2 tbsp Chopped Pecan Pieces

Instructions:

  1. Preheat the oven to 350°F and spray your loaf pan with non-stick spray.
  2. Mix together butter, sugar, and maple extract in a mixing bowl. Add in eggs.
  3. Mix in baking powder, flour, milk, pecan meal, and nutmeg, mixing until fully combined.
  4. Transfer the batter to the loaf pan.
  5. Grab a small bowl and mix together the brown sugar and chopped pecan pieces. Spread mixture over the top of the dough. 
  6. Place in the oven to bake for 1 hour and 20 minutes. Cover with tin foil for the last 15 minutes of baking. 
  7. Allow loaf cake to cool. Cut and enjoy!
