Cowboy Cookies

Saddle up for the ultimate treat!

These Cowboy Cookies are packed with all your favorite flavors—oats, chocolate, pecans, and coconut in every bite! 


1 cup Unsalted Butter, browned
1 ½ cups Light Brown Sugar, packed
½ cup Sugar
1 Large Eggs, room temperature
1 Large Egg Yolk, room temperature
2 ½ tsp Vanilla Extract
2 ⅓ cup All Purpose Flour
1 tsp Baking Soda
1 tsp Cinnamon
½ tsp Salt
1 ¾ cup Old Fashioned Oats
¾ cup Sweetened Coconut Flakes
½ cup Small Chopped Pecan Pieces
12 oz Semi-Sweet Chocolate Chips
1 tsp Flakey Salt

Instructions:

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together browned butter, brown sugar, and sugar. Add in eggs, egg yolk, and vanilla extract, then whisk together until well combined.
  3. In a separate bowl, combine all dry ingredients (flour, baking soda, cinnamon, salt, old fashioned oats, coconut flakes, chopped pecan pieces, and chocolate chips).
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Scoop out 2-inch balls of cookie dough and place on baking sheets with space in between.
  6. Bake for about 12 minutes or until cookies are light brown and set at the edges but soft in the middle.
  7. Add flakey salt and any extra toppings you would like, serve, and enjoy!
